Theory 1:
A red dye simply was just not commonly available until much later on.
Theory 2:
After the period of time in which tartans were banned, old kilts were dug up from being buried in the battlefield from decades earlier. Of course, overtime, they naturally became weatherd and faded, thus giving the "faded look" that is predominant in all the clans various "ancient" tartan patterns. (this theory was passed on to me from a fellow in Scotland)
